Description
Rose hips are the fruit that forms after the successful pollination of a rose flower. They become ripe through late summer and early autumn.
Rose petals and hip are both edible. They are in the apple family and the hips have some of the same tartness as a crab apple. Rose hips are high in vitamin C.
It's best to harvest them after the first frost. The seeds have a hairy, irritating covering and should be removed. Rose hips make a lovely tea, syrup, or jelly.
